What Makes a Cooking Oil Sustainable?
Three numbers drive most of the environmental difference between cooking oils: how much land the crop needs per kilogram of oil, how much greenhouse gas its full supply chain emits, and how much freshwater the crop draws through irrigation. None of the three is the whole story on its own — an oil can be land-efficient and still carry high deforestation risk, or land-hungry but grown on existing farmland that was never forest. A fourth factor that doesn’t show up in a life-cycle assessment at all is what happens after the bottle is empty: glass and aluminum recycle at far higher real-world rates than the PET plastic most supermarket oil ships in, and every fryer’s worth of used oil is a disposal decision in its own right.
What Is the Most Sustainable Cooking Oil?
There isn’t one answer, because land, water, and carbon don’t always agree. By land use per kilogram, palm oil is the most efficient crop grown — but that same efficiency is what makes it profitable to clear rainforest for. Among oils without a deforestation link, canola/rapeseed and soybean use the least land, per Poore and Nemecek’s 2018 Science analysis. If you’re optimizing for a single number and want to avoid the palm trade-off, canola or rapeseed is the most defensible everyday choice among the widely available oils this page checked.

Twelve Oils, by Footprint
Land use, greenhouse-gas emissions, and freshwater withdrawal figures below come from Poore and Nemecek (2018), Science, the largest food life-cycle-assessment synthesis published to date, covering roughly 38,700 commercially representative farms across 119 countries. Where that dataset doesn’t cover an oil — avocado, coconut, peanut oil, and cultured oil weren’t among the crops it analyzed — the table says so plainly rather than estimating a number. Prices and packaging are what this build could confirm against a maker’s own page or a live Amazon listing today; where nothing could be confirmed, the table says “Not verified today” instead of guessing.

The Palm Oil Paradox
Palm oil produces roughly 36% of the world’s vegetable oil on about 8.6% of the land allocated to oil crops, according to a 2023 peer-reviewed review in Frontiers in Public Health. That’s the most land-efficient oil crop grown anywhere, by a wide margin — the table above shows palm using roughly a tenth as much land per kilogram as olive oil. It’s also exactly why palm expansion is profitable in ways that push into tropical forest and peatland: a hectare of oil palm outproduces a hectare of nearly anything else, so converting forest to palm plantation pays for itself faster than converting it to almost any other crop. The land-efficiency number and the deforestation risk aren’t in tension — they’re the same fact, read two different ways.
RSPO (Roundtable on Sustainable Palm Oil) certification doesn’t change the land-use or carbon figures in the table above; palm oil’s underlying agronomy is the same whether or not the specific plantation is certified. What certification changes is traceability and audit: RSPO-certified supply chains are tied to plantations that have committed to no-deforestation and no-peatland-conversion standards and are subject to third-party audits, while uncertified palm oil carries no such tracing. Buying certified doesn’t make palm oil land-free — nothing does — but it’s the closest a consumer gets to knowing the plantation wasn’t recently forest.
Is Olive Oil Bad for the Environment?
By land use per kilogram, olive oil is the highest-footprint oil in the Poore and Nemecek dataset — roughly 2.5 times canola or soybean’s figure. That’s a different kind of land use, though: olive groves are perennial trees, often on land too dry or hilly for row crops, not annual fields cleared for a single growing season. Olive oil isn’t associated with the tropical deforestation that makes palm oil controversial. Its environmental profile is a lot of land, used a certain way, rather than land converted from forest.

Is Avocado Oil Sustainable?
It’s more water- and land-intensive to grow than most annual oil crops, but no peer-reviewed global land-use or water-footprint figure for avocado oil exists at the same scale as the Poore and Nemecek oilseed dataset, so a precise ranking against canola or soybean isn’t available today. What’s documented is regional: avocado orchards in water-stressed growing regions like parts of Mexico and Chile draw heavily on irrigation. Zero Acre — a maker of a competing oil, so read this figure with that in mind — has stated on its own blog that a single avocado takes over 60 gallons of water to grow; that’s a company claim we haven’t independently verified. The primary academic water-footprint methodology this kind of figure would draw on does cover fruit crops generally, but doesn’t publish an avocado-oil-specific number we could confirm.
Are Seed Oils Unhealthy?
The peer-reviewed evidence doesn’t support the “seed oils are toxic” claim that circulates online. The American Heart Association’s 2017 presidential advisory recommends replacing saturated fat with the polyunsaturated fat found in soybean, corn, and sunflower oil to lower cardiovascular risk, and a pooled analysis of prospective cohort studies cited by Harvard’s Nutrition Source found higher linoleic-acid intake — the omega-6 fat seed-oil critics single out — associated with lower coronary heart disease risk, not higher. Harvard’s Nutrition Source lists canola among its recommended everyday cooking oils for the same reason. What actually degrades an oil is reuse, overheating past its smoke point, and poor storage — not which plant it came from.

What Is Cultured Oil?
Cultured oil is fermented rather than pressed. Zero Acre, the main brand selling it, ferments sugar from sugarcane using a process the company compares to how yeast converts sugar into alcohol for beer or wine, yielding an oil without growing an oilseed crop at all. Zero Acre reports its own life-cycle figures — 90% less land, 86% less greenhouse gas, and 83% less water than soybean oil — as company claims we haven’t independently verified against a peer-reviewed LCA of the kind Poore and Nemecek published for conventional oils. What Are Seed Oil Alternatives?
If the concern is specifically avoiding annual seed crops rather than health, the closest substitutes are oils pressed from fruit rather than seed: extra-virgin or refined olive oil and avocado oil both fit, along with coconut oil (pressed from the fruit’s flesh) and cultured oil (fermented, not pressed from any crop at all). None of these is inherently healthier than canola or sunflower — see “Are seed oils unhealthy?” above — but they answer the specific question of avoiding seed-crop agriculture rather than a health concern the evidence doesn’t support.
Buying and Using Oil With Less Waste
If there’s a half-used bottle of vegetable oil in the pantry right now, the most sustainable move is to finish it. Oil doesn’t become more sustainable by being poured out and replaced with a trendier bottle — the footprint in the table above was already spent growing, pressing, and shipping that oil, and pouring it out adds a disposal problem on top of a sunk cost. Switch on the next bottle, not by discarding a usable one.
When it is time to buy, size and refillability matter more than which single oil wins the LCA table. A large tin or a bulk bottle you’ll actually finish before it goes rancid beats a string of small bottles bought one at a time, both in packaging per ounce and in price per ounce — the Kirkland and Chosen Foods listings above both drop meaningfully in cost per fluid ounce at their larger sizes. Graza sells its Sizzle olive oil in both a standard squeeze bottle and a separate aluminum refill can meant to top off the same bottle rather than replace it outright — a real buy-once mechanism worth checking for before assuming every bottle is disposable.
On the health question specifically: match the oil to the cooking temperature rather than avoiding a whole category. An oil pushed past its smoke point breaks down and produces the harsh flavors and oxidation byproducts people associate with “bad” oil, and that happens to olive oil past 400°F just as it happens to soybean oil reused one time too many — the mechanism is heat and reuse, not the plant of origin. At end of life, glass and aluminum are the packaging materials worth favoring when the choice is available: both recycle at meaningfully higher real-world rates than the PET plastic most supermarket oil bottles use, and neither degrades in recycling the way plastic resin does after repeated cycles. The oil itself is the bigger disposal question, though — the EPA is direct on this: never pour cooking oil or grease down the drain. It solidifies in pipes and municipal sewer lines and is a leading cause of the blockages that cause sewage backups. Let used oil cool, pour it into a sealable container, and either take it to a municipal collection point (many cities that run curbside food-waste programs also collect used cooking oil separately) or seal it in the trash.
“Buy it for life” doesn’t apply to a consumable the way it does to a pan or a knife — cooking oil gets used up by design, and there’s no version of a bottle of oil that lasts decades. What does carry a buy-it-for-life logic is the dispenser: a reusable glass cruet or a refillable squeeze bottle you top off from a larger tin, rather than a fresh single-use bottle every time. That’s the buy-it-for-life decision available here — not the oil, but what you pour it from.
