The material touching your food matters more than whatever “non-toxic” means on the box: a bare metal or glass pan has nothing to disclose because there’s no coating, while a coated pan’s safety rests entirely on a chemistry claim you usually can’t verify yourself. Bakeware splits into five real categories — PTFE nonstick, ceramic-coated steel, bare metal, glass, and glazed stoneware — and each one answers a different question about what happens when batter meets heat.

What “Non-Toxic” Has to Cover on a Coated Pan
PTFE is the fluoropolymer resin behind most classic nonstick bakeware, and it is itself a PFAS — the FDA’s own overview of authorized PFAS uses in food contact describes nonstick cookware coatings exactly this way: PFAS molecules polymerized into large chains and bonded to the pan at high temperature, which the agency notes leaves negligible migratable PFAS in the finished coating. That distinction matters for how bakeware gets marketed. “PFOA-free” only rules out one older PFAS compound that manufacturers phased out years ago; it says nothing about whether the coating is still PTFE. A pan has to state PTFE-free specifically, not just PFOA-free, to make the stronger claim.

A second coating category sits between PTFE and no coating at all: ceramic-coated steel, the sol-gel finish behind Caraway’s and Great Jones’s bakeware lines. Despite the “ceramic” name, it is a silica-based sol-gel finish, not fired clay — a different chemistry from PTFE, sprayed over an aluminized steel pan rather than baked into it. Both Caraway and Great Jones state their coatings are free of PFOA, PFAS, PTFE, lead, and cadmium together, which is a more complete claim than “PFOA-free” alone. The trade-off these coatings share is that they wear with metal utensils and abrasive scrubbing the same way PTFE does, just under a harder surface.
The Bare-Metal Options: Aluminum, Steel, and Cast Iron
Bare metal skips the coating question entirely, because there’s no chemistry to disclose. Bare aluminum, the metal under Vollrath’s foodservice sheet pans, is a reasonable choice for baking specifically — dry, relatively brief heat, not the hours-long contact with an acidic sauce that raises more leaching concern in cookware. Aluminized steel — a steel core coated in a thin aluminum-alloy layer, the base metal under USA Pan’s and Great Jones’s pans — adds warp resistance that plain aluminum lacks, which is why most commercial sheet pans use it instead.
Uncoated stainless steel, the metal in 360 Cookware’s and All-Clad’s bakeware, has one real drawback: food sticks to it more readily than to a coated pan, so parchment paper or a light coat of fat isn’t optional the way it is with nonstick. What it gains in exchange is a pan with nothing to wear through — both makers back their stainless bakeware with a lifetime warranty, a claim that would be unusual on any coated pan because coatings, not the metal underneath, are what eventually fail. Carbon steel behaves like a lighter-weight cousin of cast iron: it seasons the same way, resists warping under high heat better than aluminum, and needs the same dry-and-oil habit to avoid rust, but a fresh carbon steel pan can react with a very acidic batter until that seasoning builds up.
Cast iron is the outlier in the whole category, because it’s effectively repairable forever. Lodge ships its baking pan pre-seasoned with vegetable oil, made in the USA, and rust or a patchy seasoning layer is a fixable problem, not a reason to replace the pan — strip it, re-season it, and it’s back to work. Glass and Stoneware: Where the Glaze Matters More Than the Pan
Glass bakeware raises a materials question that has nothing to do with PFAS. Anchor Hocking’s own technical page states that all U.S.-manufactured glass bakeware today, regardless of maker, is tempered soda-lime-silicate glass, not the borosilicate glass that was standard decades ago; the company’s testing, cited on the same page, found tempered soda-lime glass equal to or better than borosilicate at resisting thermal shock, the sudden temperature swing that actually cracks glass bakeware. Pyrex’s current 9” x 13” baking dish is tempered glass built to the same standard. The practical rule is unchanged either way: a gradual oven preheat is fine, but a frozen or refrigerated dish going straight into a hot oven, or a hot dish landing on a cold or wet counter, is the failure mode to avoid.
Stoneware and glazed ceramic answer a different question again: what’s in the glaze, not what’s in a coating. The FDA warns that lead in the glaze of traditional pottery can leach into food, and California requires a Proposition 65 warning for cadmium as well as lead on products that exceed the state’s exposure thresholds. Emile Henry states its bakeware is a single high-fired Burgundy clay body rather than a separate glaze layer, and Xtrema states its 100% ceramic line has no extractable lead or cadmium and is Prop 65 compliant. Made In’s porcelain baking slab is a related but distinct material — porcelain fired from a different clay recipe, naturally nonstick without any added coating.

What each maker will put in writing about its own pans, quoted close to their wording, with prices as of August 2026. Ten rows come from a product listing; Anchor Hocking sells no bakeware direct and is read from its technical page on glass composition instead, and Vollrath from its foodservice catalog, which is why neither carries a price. A blank field is a maker that stays silent, not a maker with something to hide.

All-Clad’s stainless cookie sheet sits next to USA Pan’s coated aluminized-steel pan to show the same category — a full sheet pan — built two different ways: nothing on the surface, or a disclosed silicone coating. Made In’s porcelain slab isn’t carbon steel, despite the brand being best known for it; the porcelain slab is the only bakeware it lists, which is why it appears here as a glazed material rather than a metal one.
The Buy-It-For-Life Order, and What to Retire First
If the goal is bakeware you replace as rarely as possible, uncoated stainless steel comes first: nothing on it can flake, scratch through to bare metal, or off-gas, so it degrades only by denting or warping, and that’s reflected in the lifetime warranties All-Clad and 360 Cookware both offer. Cast iron is close behind for a different reason — rust and worn seasoning aren’t failures, they’re maintenance, and a Lodge pan re-seasoned every few years has no obvious end of life. Glass lasts exactly as long structurally, but its failure mode is binary: a thermal-shock crack ends the dish all at once rather than wearing gradually. Carbon steel rounds out the buy-it-for-life order, with the same seasoning upkeep as cast iron in a lighter, faster-heating pan.
None of this means a coated pan already in the kitchen needs replacing today. A ceramic-coated or PTFE sheet pan that’s still smooth and releases food cleanly is doing its job, and buying a new one to feel better about the material is the kind of performative swap that adds waste rather than removing it. The one piece of bakeware actually worth retiring is a nonstick pan with visible scratches or flaking — a compromised coating is failing at the one job it exists to do, which is different from a coating that’s simply not the reader’s first choice of material.
End of life looks different across the five categories, too. Uncoated metal, cast iron, and carbon steel are all scrap-metal recyclable once they’re truly done, which for cast iron in particular can mean generations. Glass bakeware isn’t accepted in most curbside glass recycling — tempered and heat-treated glass has a different melting point than bottle glass and contaminates the recycling stream — so a cracked dish is genuinely trash, another reason to protect it from thermal shock in the first place. A coated pan’s metal core can often be recycled once the coating is scraped off, though most municipal programs don’t sort for that distinction, so check local guidance before assuming a nonstick pan is curbside-recyclable.
Is PFAS-Free the Same as PTFE-Free?
No. PTFE is itself a PFAS — the FDA’s own overview of authorized PFAS food-contact uses describes nonstick cookware coatings as PFAS molecules polymerized into a bound coating on the pan. A label that says “PFOA-free” is only ruling out one older PFAS compound, not the coating chemistry itself; Caraway and Great Jones are the two makers here that state PTFE-free and PFAS-free together, which is the stronger of the two claims.
Is Aluminum Bakeware Safe?
Bare aluminum is a reasonable choice for the dry, brief heat of baking, which is a lower-risk exposure than aluminum cookware holding a long-simmered acidic sauce. The practical rule stays the same regardless of glass type: never move a glass dish straight from the freezer or fridge into a hot oven, or set a hot dish on a cold or wet surface.
